- 4 tablespoons lime or lemon juice
- 2 tablespoons of fish sauce
- 2 cloves of garlic, crushed
- half teaspoon of sugar
- 2 or 3 fresh red birds eye chillis, chopped up
- couple of tablespoons of water
simmer everything together for about 10 minutes then push through a fine strainer with a spoon. Add a little water if you need more. Serve on any kind of salad but particularly good with seafood or chicken. Add fresh coriander for perfection.
