Sun Dried Tomatoes

Slice some slightly overripe tomatoes in half, scoop out the seeds to form mini boat type things and place on an oven tray. Sprinkle with a small amount of sugar and some Maldon salt. Sliced garlic and thyme if you can be arsed. Drizzle with oil. Dry in low oven for a couple of hours, eat the lot and start again.
