Toasted Sandwiches

I’ve been making toasted sandwiches for lunch at work. Been buying good ingredients from the local upmarket supermarket and mixing and matching to see what works. Nothing like a good double brie and some proper good bread.

Been cooking it in a preheated pan and drizzling some olive oil on the bread before panning to make it nice and crispy. Makes me look forward to lunch each day.

This week is sliced smoked chicken with double brie, avocado, french mustard and pepper. I think it needs some mayo so might get some for tomorrow.

I recommend artichoke hearts, sliced, to go with that. Also, a touch of cranberry with the brie.
