Spring Soup

Makes enough for reg to eat over 2 days with bread and Lurpak
* lol at :( ) *
Gets better the second day.

  • 25 g butter (fuck yes)
  • 1 small leek diced
  • 1 small onion diced
  • 1 average potato – whether you like it diced / chunky is up to you. I’m more of the camp that a soup should be soupy, and a broth should be chunky.
  • 1 carrot
  • 100g asparagus (the win of this dish. If you like asparagus, as I do, stick even more in. Make your pee smell right foul.)
  • 50g rice
  • 75g spinach
  • Salt (NO PEPPER)
  • 50g cream
  • 300ml veg or chicken stock (I use chicken, but cooking for mrs reg tomorrow :( )

It all goes as you expect.

Cook the onion in the butter and salt (more added at start means less overall *COOKING TIP FROM MARTIN WISHART YO*), add the potato and leek once it’s soft, add the carrot once that’s soft, then add the rice. Add the stock after a minute. Let the potatores soften, then the asparagus, then the spinach.

If you’re me, blend the fuck out of that. If you’re mental, don’t.

Back on the heat, add the cream and cook for a minute or two.
